From Sweden with Love

Please welcome a good friend and my adopted son Anders to the blog. He was born and bred in Norway, but now lives in scenic Gothenburg, Sweden. Click here to view pictures of the beautiful island. Anders is also the Founder and Administrations Manager for Queer Town Abbey, a respected online magazine for the LGBTQ community, friends, and supporters.

Along with all his other credits, Anders is an avid cook and baker. Today he brings with him an amazing carrot cake that serves four. I'm not sure if the frosting is the clincher, the cake, or the excellent combination, but Studs and I can't seem to get enough of this delicious dessert.

Carrot Cake
2 large eggs
3 cups granulated sugar
1½ cups neutral oil (Crisco or Wesson)
4 cups flour
1 tsp. bicarbonate of soda (baking soda)
½ tsp. baking powder
2 tsp. ground cinnamon
1 tsp. ground ginger
½ tsp. salt
300g peeled carrots (5 cups finely grated)
1½ cups coconut grated or shredded

Preheat the oven to 175°C 350°F.

Cover the bottom of a springform tin with baking paper.

Beat eggs and sugar until white and fluffy. Add the oil and whisk together.

In a medium-sized bowl mix together flour, baking soda, baking powder, cinnamon, ginger, and salt.

Stir the dry ingredients into the egg mixture. Finish by folding in the grated carrots and coconut.

Pour batter into pan. Bake 45-50 minutes until a toothpick comes out clean.

Remove Your Carrot Cake from a Springform Pan
Cool the cake completely before you attempt to remove it from the pan.

Slide a flat-bladed knife, such as a butter knife, around the inside edge of the pan to loosen the cake. Unfasten the latch on the side of the pan and gently ease the side of the pan off the cake.

Gently place your serving plate over the top of the cake. While you hold the bottom of the pan upend the cake in a fluid movement. Carefully slide your knife between the bottom of the pan and the cake. Lift off the bottom of the pan. Peel off the parchment paper.

Cream Cheese Frosting
100g butter, unsalted (4oz.)
200g cream cheese (8oz.)
4 cups sifted powdered sugar
grated lemon zest/peel or vanilla to taste

Beat the butter until creamy. Add cream cheese and whisk together thoroughly, about 3-5 minutes.

Sift the powdered sugar over the top and whisk together until well blended and creamy.

Do you want to flavor the frosting? If so, add lemon zest or a little vanilla.

Spread frosting on the cake and decorate with, for example, pecan or walnut halves, or serve just as is.

What’s in a Name?

Many writers write under a pen name and I decided I was going to do this as well. Firstly, I had been working as a librarian and I had wanted me the writer separate from that identity.

So why did I choose Eleni Konstantine?

Well, Eleni is actually my real name. Confused? When dad registered me at the Australian consulate (I was born as an Australian overseas as my dad by this stage was an Australian citizen), they used the Anglicized version of my name – Helen. So Helen I became as well as Eleni and I’ve been answering to both all my life. I believe if you’re going to pick a pen name, pick one you will respond to. If someone is calling your pen name and you don’t respond, that doesn’t bode too well for your brand name.

Hence, Eleni was a good fit.

But why Konstantine? Believe me when I tell you it took me a long time to find the right last name. I went through variations of different places, names, and influences. But nothing seemed to fit. Then one day I happened to look upon an icon we have at home (being Greek Orthodox, we have some of the Byzantine styled icons) and I had an ‘aha moment’. It was one of Saint Konstantinos with his mother, Saint Eleni (Konstantine and Helen). My godson’s name is Konstantinos (Kosta for short) and we celebrate the same name day, and so whammo, there it was. My name.

What’s a name day?

Those in the Greek Orthodox faith, baptize their children using the name of a saint. When the saint has their religious day in the calendar, it is said to be a name day (yiorti). All those who have that name celebrate that name day. Konstantinos and Eleni are May 21st.

So belated happy name day to me and all the Elenis (Helen, Helen, Helen, Elena) and the Konstantinos’ (Kosta, Con, Kon) out there.

The Dos Equis Michelada
12 oz Dos Equis® Ambar
¼ cup lime juice
½ tsp. Worcestershire sauce
½ tsp. hot sauce
¼ tsp. soy sauce
2 oz. tomato juice
Red pepper flakes or chili powder
Ice

HOW TO MAKE IT
Rim a 16-oz. beer mug with lime juice and red pepper flakes. Add ice and pour in a bottle of Dos Equis Ambar. Mix in the remaining ingredients.

And…pssst….The Mad Dog added a few green olives to the drink. Perfectamundo.

Honor

I STARED through the slats of the tree house roof at the porch light shimmering on the leaves. The weathered boards were warm and rough on the soles of my bare feet, and the musty smell of the worn wood soothed me, turned me on.
The little wood sanctuary had hosted some of the best memories of my life. In this secret clubhouse, my buddies and I stashed comic books and Playboy magazines. We sneaked cigarettes, turning our little haven into a sort of juvenile male-only nightclub.

It was here I discovered I didn’t go for the chicas in the nudie magazines but instead lusted for the cocks and tight asses of chulos. One hot summer night a million years ago, on the floor of this little dilapidated tree house—crickets going wild in the dark and lightning bugs glittering in the shadows of the trees—I made out with a boy for the first time.

That boy was Jorge Villagomez.

Thin, pale Jorge, who always seemed to be in frail health. Constantly missing school, in and out of the hospital, never having to participate in gym. The boy who carried a little plastic container filled with his medications in his backpack. Although he never spoke of it, not even to me, the undisputed word—from a kid named Julie something-or-other who knew everything—was that Jorge had a heart condition.

Beautiful, ungodly beautiful Jorge. Somehow his fragility made him all the more divine. Unbearably delicate skin complemented with the shiniest, blackest hair I’d ever seen. But it was his eyes that riveted me. Clear, mystical, startling silvery gray. And in the middle of all those ravishing features was the cutest gap-toothed smile. That tiny flaw lent Jorge a smidgen of ordinariness. It almost made him approachable.

Rich, spoiled Jorge. Hell, even his name dripped with privilege. Jorge Villagomez. His parents—of noble Spanish heritage—were San Antonio society, steeped in culture and money.

Fiery, icy, bossy, bitchy, girly, sweet, adorable Jorge. Sickly as he was, feminine as he was, nobody but nobody ever made fun of him. He never endured the bullying most of the weaker kids did. Something in Jorge defied the teasing. His very spirit double-dog dared anyone to make fun of him.

My Jorge.

What that exquisite creature saw in me, I hadn’t a clue. I figured he got some rich boy’s thrill hanging out in my not-so-affluent neighborhood.

But then I figured if a guy like me was lucky enough to be on the receiving end of Jorge’s libido, I shouldn’t ask questions. I’d just smile and roll around in the sexual glow.

If I lived a hundred years, I’d never forget the day he sashayed into my life.

EXCERPT:
The biggest surprise about the Shewawa Water Tax Rebellion of 2176 was that no one on Xerios saw it coming.

Oh, the Celestial Council knew cosmic numbers of Shewawans were swelling the ranks of the opposition. Who could miss that? Long before the proposed Water Tax had taken effect, news reports overflowed with stories of protestors and frivolous arguments—well, arguments the Council called frivolous. The protestors, as ever through recorded history, were deadly serious—so serious that when civilized avenues of protest failed, they turned to more forceful ways of expressing displeasure.

Tax accountants who’d been posted to Shewawa on standard duty tour understood the brewing danger. We encountered it every day, first hand. We sent urgent red-alert notices back to Xerios via the tax hotline, advising the Council’s Senior Tax Commissioner of the agitation boiling up all over the colony. The STC and the rest of the Council dismissed our warnings, refusing to believe a ragtag group of upstarts would challenge their authority to impose the Water Tax. So events continued to burble downhill, the way they do when no one has the courage to face the truth or the vision to chart a new course.

I never expected to get caught up in the rebellion. I was a Certified Etherworld Accountant, an expert at numbers warfare, not a Shewawantologist. Maybe I should have been less casual about the impact of the Water Tax, since I was part of what the protestors had begun to call the “oppressors.” But in some ways, I was as blind as the Council. As surely as my name is Ichann Count, I knew what was going to happen, even if I didn’t want to acknowledge my intuition or admit I thought the protestors had a point.

I considered myself an ordinary person, doing my ordinary job. Like a gazillion others across the Tri-Galaxies, I got up every morning, ate breakfast, brushed my teeth, and went to work. I spent my days crunching numbers at the Etherworld Tax Bureau with a hundred other CEAs and crushing on my cute cubicle-sharer, Fifo Ventry.

The Monday the Water Tax went into effect, I was doing both. I sat behind my light-beam privacy curtain, trying to ignore the office turmoil surrounding me. My co-workers abandoned their desks and gathered in uneasy clusters by the main conference room, sipping hot fragrant Starshine coffee and muttering to each other. We were all waiting for our boss to brief us on his morning’s skull sessions with the political factions on Xerios who wanted us to enforce the legislation and the Shewawan revolutionaries urging its repeal.

None of us expected the news to be good. We’d hoped to be back home in Xerios by now, but redeployment was doubtful. The Water Tax meant a ton more work and the Tax Bureau was already short-staffed.

DINE AL FRESCO

Here is a wonderful summer dinner for two. This chicken salad recipe originated with my longtime friend Ann. Over the years I’ve added and deleted ingredients to suit our changing tastes. I hope you enjoy the meal as much as Studs and I.

Chicken Salad
Chilled Asparagus Spears
Red Grape Clusters
Croissants
Crisp White Wine


Chicken Salad
1 cooked boneless chicken breast (preferably boiled) cooled and torn into bite-size pieces
1 avocado, peeled and sliced into eighths
1 small jar marinated artichoke hearts, drained
¼ cup celery, chopped fine
Red onion, sliced thin, quantity to taste
Lemon pepper to taste
¼ tsp. dried basil
¼ cup slivered almonds, optional
Mayonnaise to your preferred consistency

Combine all ingredients in a medium-size bowl. Gently stir well.

Cover with plastic wrap. Refrigerate at least 2 hours before serving.

Chilled Asparagus Spears
8 fresh asparagus spears per person
Chicken stock
Splash white wine
Tap water

Lay the asparagus onto a cutting board. Be sure all the tops are even. Cut off an inch or two from the bottom of the stalks.

Insert a steamer into a medium-size saucepan. Add enough stock to come half way to the steaming holes at the bottom, then splash in the wine. Top off with water so the liquid is just below the holes.

Place asparagus in steamer, cover, and bring liquid to a full boil. Shut off heat and allow the pan to sit for 3-4 minutes.

While the asparagus steam prepare an ice bath. Use a bowl large enough to hold the asparagus without crowding. Set the bowl in your sink and fill with cold water and ice cubes.

When the steam time has passed immediately remove the asparagus from the pot and plunge them in the ice bath for 1 minute. Remove asparagus to paper towels and dry well. Place the spears on a plate, cover with plastic wrap. Refrigerate at least 1 hour before serving.

Red Grape Clusters
Rinse the grapes under cool water. Using sharp scissors, clip the stems into small clusters. Place them in a colander with a plate beneath and store in the refrigerator until ready to serve.

Arranging the Plates

Divide the chicken salad in half. Spoon onto one side of each dinner plate, but don’t spread thin. A little mound is attractive. Lay the asparagus spears across the center of the plate parallel to the chicken. Place grape clusters next to asparagus. Serve the croissants on bread plates. Be sure to toast each other often with the wine.

“Are you on drugs?” She closed her eyes and cringed. Probably a bad joke to make to a pharmacist. “Don’t answer that.”

She finished buttoning her dress.

At that, he finally moved, slowly and sinuously toward his clothes.

She watched as if he were some sort of exotic cat she’d only ever seen in books.

He’d always been gorgeous, but he’d grown into that lankiness he’d had as a young man, and now he looked delightfully athletic. He certainly seemed strong enough, judging by the way he’d picked her up so easily and dropped her onto his desk.

He eyed her, his expression a curiously blank mask as he dressed. “I’m not on drugs, Justine. I meant it. Why couldn’t we pick up where we left off? Give me one good reason.”

Bells chimed at the pharmacy’s front door, and a boyish voice queried, “Dad? You here? I need more money.”

Dad?

Gray’s jaw twitched.

“Dad, huh? Well, there’s a reason.”

Spice Up Your Summer

Sam Cheever has the perfect addition for all your summer festivities. This also makes a wonderful dinner when served with salad and potato salad!

COCONUT CHICKEN
1 to 2 lbs. boneless, skinless chicken breast
2 large eggs
¼ cup coconut milk-any milk will do
½ cup flour
1 cup Panko breadcrumbs
1 cup shredded sweetened coconut
½ tsp. salt
½ cup vegetable or coconut oil
Sweet Chili Sauce for dipping

Preheat oven to 350°F.

Cut the chicken diagonally into strips.

Prepare three separate bowls for breading your chicken: Bowl 1, combine flour and salt. Bowl 2, whisk eggs and milk together. Bowl 3, mix breadcrumbs and coconut together.

Heat ¼ cup of vegetable oil in a large skillet over medium/high heat. To test, drop a little flour into the oil. When it sizzles the oil is ready.

Then dip the chicken in the bowls, starting with bowl 1 and on through 3. Lay the coated strips on a plate until you have coated them all. Don’t stack the strips.

Place some of your chicken strips in the hot oil. Be sure to leaved space between each strip. Fry them until golden brown. Drain them on a paper towel. Move to an ovenproof dish.

When all of the chicken is browned, bake for 10 minutes (or until done). Remember, chicken like all meat continues to cook a short while longer after it is removed from the heat.

Serve this tasty chicken with the chili sauce for dipping!
